Description of Elective Experience: 

During this two week rotation, the student will develop a basic understanding of the following Procedures as they occur in slaughter and processing federal establishments

1. Ante Mortem Inspection

2. Humane Handling

3. Post-Mortem Inspection

4. Inspection methodology

5. Sanitation and sampling (pthogen and chemistry testing as well as pathology submission)

6. Plant maangemnt communication

7. Wellness, health and safety in the plant

8. Recalls

9. Professionalism

Institutional and Educational Resources - staffing, equipment, etc.: 

The student will be shadowing a PHV in the following slaughter and processing federal establishments. The student will be provided with USDA hard hats and lab coats while he is on establishment premises. There is no cost to the student - any costs (expected to be minimal will be borne by FSIS/USDA

Student Responsibilities - what is expected of students in terms of hours, days of the week, shadowing or actual support?: 

The student will follow the schedule of the PHVs he will be shadowing and needs to report at a location when requested by the PHV. There may or may not be work boots to share at each of the different plants - therefore, the student is advised to bring his own if he possesses wellington type boots or to wear shoes/boots that are non slip and suitable for cleaning with industry-strength disinfectant cleaners. The student should not wear jewelry (watches, rings, earrings, etc) that may become a hazard if they were to fall into product.
